Apple Pie with Mad Jack Coffee Glaze

Ingredients: For the cake

  • 2.5 cups of APF
  • Baking powder 1
  • ½ tsp baking powder
  • 1 teaspoon ground ginger
  • ½ fresh nutmeg
  • ½ tsp salt
  • Unsalted butter ¾
  • 1 ½ cups of sugar
  • 3 eggs room temperature
  • ¼ cup buttermilk
  • ¾ cup of Mad Jack
  • 2 cups grated apple
  • 2 c. Espresso powder

Method: For the cake

  • Measure the flour, baking powder, baking soda, ginger, nutmeg and salt in a bowl and set aside.
  • Meanwhile, measure the butter and sugar in a mixer with a whisk cream and both.
  • Turn the mixer to low and make the eggs one at a time, add the grated apples, nuts and espresso powder.
  • The dry ingredients into three equal parts, so that the mixture be fully incorporated into the wet mixture in each case.
  • Butter and flour a loaf pan and pour the batter, bake at 325 F for about 40 minutes. Remove and rest for 15 minutes before jumping on the bread from the pan.

For the glaze:

  • ¼ cup of Mad Jack
  • 2 cups powdered sugar
  • 2 teaspoons lemon juice

Method:

  • Measure all ingredients in a heavy saucepan, stir over medium heat until the liquid dissolves sugar mixture.
  • Continue stirring and cook over medium heat for about 7 minutes.
  • Remove from heat and let stand for 10 minutes before frosting cake

Apple vinaigrette

A tasty salad dressing can be used for all your vegetables!

  • 1 cup cider Molson
  • Extra Virgin Olive Oil 1 cup EVOO
  • 1 lemon - zest and juice
  • 1 clove of garlic
  • 3 c. Honey
  • 2 c. Freshly picked thyme
  • 3 c. Dijon
  • 2 teaspoons horseradish
  • 2 dashes hot sauce
  • Salt and pepper to taste

Method

  • In a measuring mixer all ingredients except olive oil
  • Mix half
  • Water slowly through the oil
  • Season to taste.
