Fettuccine with Chicken and Tomato Dinner
16 ounces fettuccine, uncooked
2 large chicken breasts, boneless and skinless
1 medium onion
4 zucchini (about 1 to 1 ½ inches in diameter)
4 yellow squash (same size as above)
1 teaspoon canola oil
¼ cup of water
1 tablespoon chopped garlic
1 teaspoon Italian seasoning
2 cans (15.5 ounces each) diced tomatoes with Italian spices
1 cup grated Parmesan
1 Prepare fettuccine with directions, cook until al dente. Leave and reserve drain.
2 Cook the chicken cook on medium / high heat in a nonstick pan. Set aside until cool. Diced chicken.
3 chop cut the onion into cubes. Slice zucchini and yellow squash into ¼ inch medallions.
4 In the same large skillet over medium heat, sauté onion in canola oil. When almost translucent, add the zucchini and water.
5 Add the chicken, yellow squash, garlic and dried Italian seasoning.
6 Bake until squash and zucchini are soft. Add the tomatoes, cook until hot.
7 Add cooked fettuccine and toss to mix well. With Parmesan cheese on top before serving.
