Mmmm healthy bean soup! It's healthy and filling that needs for the next two weeks I indulged on the chips a little too much and take a while. Edamame Soup

A non-dairy creamy edamame soup with shredded nori. Calm, hearty and healthy!
Ingredients
- 340 g (12 ounces) frozen shelled edamame, thawed
- 1 tablespoon canola oil
- 1 small potato, about the size of the bite, peeled and chopped
- 1 medium, peeled and coarsely chopped onion
- 1 tablespoon white miso paste
- 4 ½ cups vegetable broth
- Nori, cut into thin strips
- Hot and spicy red sauce (optional)
Instructions
- In a medium saucepan over medium heat, oil, onions and potatoes. Cook for 5 minutes until the onions are soft.
- Add edamame, miso paste and vegetable stock, stir well and bring to a boil. Reduce, cover and simmer for 25 minutes heat.
- Use a blender or mixer periodically to puree the soup until smooth.
- Season with salt and pepper.
- Top with shredded nori and a few drops of hot sauce (optional).
