Make apple butter in the slow cooker is one of the great gifts of autumn. It is incredibly easy to do and makes your house smell amazing. Close your eyes and imagine yourself home after a long day of expiry smells like apples and cinnamon in the air flow slowly cooked. Seriously, people pay good money for candles that smell so good.
Make apple butter cook on my bucket list for some time. Every year around this time, I see Pinterest flooded with many recipes for apple butter. Well, this year I finally decided to do it.
Let us first about the difference between apple sauce and apple butter speak. It can be a little confusing, because basically they are cooked in the same manner and apple butter no "butter" on it. The difference in the duration of cooking. Applesauce enough to soften the apples so that they will cook ground in apple sauce. Here are my crockpot applesauce recipe here. With apple butter, when the apples applesauce to be, mix until the sauce is smooth, then continue cooking until the sauce is delicious spread produces very thick or "butter". The texture is not thick like butter, but it is much thicker than applesauce. The taste still looks like applesauce, but in a concentrated way inbound. Apple butter is like the older sister of maturity of applesauce. Well, I guess the apple butter is the adult version of applesauce. Anyway, it's delicious.
Apple butter can be made on the stove, but I decided to do me in the slow cooker. I love my slow cooker and when I have the opportunity to guess on the stove or "set and forget" who I take? Yep! Now this recipe is not just "set and forget" a recipe. 'N do not need to check it from time to time, especially during the second phase of cooking. But do not worry, it's still a very fun and easy to make recipe ,.
The type of apple I used were gala. Gala apples are soft, so you do not have to use a lot of added sugar. Most recipes called apple butter for 1 or 2 cups of sugar. I'm not sugar in recipes, however, but that seems like a lot of sugar for me. I just ¼ cup firmly packed brown sugar is used, and that did the trick. If you use an apple pie (for example. Granny Smith), you can add more sugar. The great thing about the apple butter is that it is very versatile. You can use any apple that you want and play with the spices. For spices in my recipe, I did a little cinnamon and nutmeg.
I think you'll be glad to know that my recipe does not peel the apples. Please! I think one of the reasons why I make so long, apple butter is that I did not want to wait six pounds of apples. I know I can have an apple peeler, but that requires me to remember that I have to buy one. Therefore, I always use hand peeler. So I decided to keep the skins on.
The skins of the apples are good for you anyway. You have to leave all the fiber and nutrients from apple to apple butter nutritious. In addition, all the apples were in a smooth mass that no one will ever know the skins on puree left.
Look no fur!
So, how should I eat apple butter? It tastes good in oatmeal, toast, yogurt, or a spoon straight from the jar. I even use it in cinnamon rolls. Do not know how the output, but does not that sound great?
Mmm!
Apple butter can be stored for up to one week in the refrigerator. It can also be frozen for up to 6 months.

Soft, pillowy dumplings cheese. [Photo: David Loftus]
I, like many others, fell headlong pillowy-balls-of-Cheese Gnudi love Spotted Pig in New York, where chef April Bloomfield has made famous. The version of Jamie Oliver in his new book, Comfort Food, Jamie Oliver, is similar to his friend Bloomfield, but with some personal details.
Tours of ricotta and parmesan nutmeg-laced walnut rolled in semolina and left largely to himself. They sit in the fridge covered for at least 8 hours to form a skin, then cook unprotected by armor pasta combo usually used, leading to burst the dumplings cream. When the clouds of cheese, and sexy, they would Gnudi. Oliver then throws them with butter, parmesan cheese wakes up on top, crispy sage leaves and a squeeze of lemon.
That's why I chose this recipe: If you have had Gnudi, no way I'm going to create the magic at home again.
What works: The finished dish, if you get there in one piece of the sky. The simplicity of nutmeg, sage and lemon butter Gnudi can speak for themselves.
What does not: Gnudi are picky to say the least, and much, much from infallible. For my first batch, I have a beautiful ricotta had a lot of moisture in it, also, as it turned out. I could not form the beads until the beads have a decent coating grits were amazingly smooth and even. Cooking was almost too much for her, and it was definitely the hot pan. They parted wide, and I was so tasty with a heartbreaking left, Heap seeps Gnudi. For my second batch, I drained the ricotta in a colander with a double layer of paper towels lined for an hour and then went on. What a difference! I could pick up the ball and ricotta without problems, and the Gnudi resist much better for the rest of the preparation. (Even if they are small cute things, and will always be a little fragile, so handle with care.)
Tweaks suggestion: If you do not choose your ricotta in your hands and gently roll into a ball until they can proceed. (For the ricotta, Oliver, call for the best quality I have cow's milk, and the Gnudi were soft and milky, but Bloomfield used sheep's milk that floats your boat for more flavor and radio usage ..) And here There is some more information on the recipe to make it easier for you a bit: Oliver says to form the cheese mixture into 1-inch balls, which worked out about a tablespoon of each; I finished with 50 Gnudi. Reduce to simmer the water to reduce the risk of falling over and try to do a test. If you still want to use, give them a second shot in corn flour before adding water to the skin, it is difficult, but they have a better chance to have grilled in one piece. You can try to reduce the cooking time tip the scales in their favor one minute.
Thanks to the wonderful people at Ecco, we have 5 copies to give comfort Jamie Oliver this week.

About this recipe
Ingredients
Gnudi
2 pounds ricotta better
3 1/2 ounces Parmesan
Set 1 nutmeg, for grating
Semolina, for dusting
I pour
Good quality unsalted butter
1 bunch fresh sage (1 oz)
Parmesan cheese, for grating
1 lemon
Method
Place the ricotta in a bowl with a pinch of sea salt and black pepper, then finely grate Parmesan and nutmeg. Whisk together, then try to check the balance of seasoning is right that you want the very subtle nutmeg. Cover a large tray generously with semolina, then roll the ricotta mixture into 1-inch balls go rolling in the grass eating, coated to very good. You should be around 40 Gnudi this amount to get the mixture. Stir well and cover with flour and let stand for 8 hours, or preferably overnight in the refrigerator (not cover plate): the food Ricotta Gnudi drained, the good thin layer.
The Gnudi have cook 3 minutes, and I like to cook in batches of two parts, take care of them. So, shake excess cornmeal from the value of Gnudi two parts in boiling salted water, while a large piece of butter melted in a pan over medium heat and choose from over 20 sage leaves brown. Remove the leaves on a crisp plate and collect the Gnudi water directly into the pot, add a tablespoon of cooking water. When the butter emulsified water, remove from stove and grill on a layer of parmesan cheese, a few drops of lemon juice and mix well. Serve immediately in warm bowls, with an additional network of nutmeg and Parmesan and crispy sage leaves, while you get the next batch, wipe the pan between batches. Welcome to the strip club.
Observation Gnudi can be easily converted by the addition of an ingredient in the season. Asparagus, peas, mushrooms, fresh tomatoes or a part thereof to rock the party with sage butter. In summer, a few leaves of fresh basil and ricotta mixture of broken are beautiful; or winter, a little red wine deglaze the pan quality are used to a lot of charm.

In recent years, the chef of the Armed budget challenge week provided candidates with $ 20 and some frozen or canned vegetables. If one of the participants in 2013 was able to add a bottle of wine in the grocery shopping, I wonder if $ 20 is really a challenge. As a mother of two adolescent children, $ 20 seemed a challenge for me.
So if the new book by Jessica Fisher "Good Eats" landed on my desk recently I knew I had to lower the bar. In his book, Fisher, a wife and mother of six WHO coupon its way out of debt restructuring, shares 200 recipes that together for $ 10 or less. Seriously $ 10.
His trick is coupons. It is smart shopping.
"It's about who has the best prices," says Fisher, who made his home in the San Diego area and has agreed to join the Board in this week's tax revenue. She said that the menus in the book are designed around a single window.
"If you do not have the mentality of clipping coupons or sales of hunting, consider the handful of places where you do not know this business and the prices are for the things they buy, check," he says. Of course, if you see a good price for canned beans or other non-perishable inventory items.
He suggested menu planning and shopping once a month.
"I know that the vast project that sounds a month needs -. .. Except for milk and products that you shop holds in stores that do not need things"
Do not skip your recipes, the meat, but that shows how to stretch. Buy beef tri-tip, for example, then cut taco place as a center for meat-the-board is used. Shrimp and cilantro tossed with pasta or spicy Cajun sausage and rice stirred.
Tips are scattered throughout the book. Cooking a 5-pound bag of dried beans in a pot and end up with the equivalent of 15 cans of beans. Freeze in 2 cup portions and the cost is around 33 cents, from 50 to 75 percent cheaper than canned beans.

There are many chickens sacrificed on the altar of waste in the UK; Staggering 280,000 tons in 2012, of which 110,000 were avoidable. This has always been a little odd to me that all the food is wasted in the chicken in the UK seemed a of the most versatile; some leftover roast chicken can be many new forms of income which, frankly, is hard to know where to start to take.
The Food Standards Agency does not recommend the storage of raw chicken in the bottom of the fridge for a day or two (the reason is that any liquid seeping into other foods that can cause food poisoning.) While it is probably difficult to break the habit, the washed raw chicken before cooking, because germs can spread by splashing water. Cook chicken to the proper temperature to kill bacteria, and you must make sure that the chicken is cooked; should run clear and the meat juices should show no sign of pink.
Leftover chicken can be stored in a closed for three or four days and in the freezer for about four months vessel in the refrigerator. I think more than that and cooked meat begins to suffer the ravages of frostbite and very dry when thawed. I have often boiled chicken with some sauce chicken, freeze when I did that seems to prevent a deterioration of the texture.
1 leftover chicken curry
Originally marinated chicken curry recipe as parts from the ground to start me presents from the mother of one of my friends from the Punjab. This version reduces some steps to do so, and but the number of species is a great way to make leftover roast chicken, the longer cooking can not withstand.

Heat two tablespoons of oil in a large pot. Saute chopped onion with a pinch of salt for about 15 minutes until they are soft. Garlic and ginger. Furthermore fry gently for two or three minutes, stirring occasionally.
Add spices and make sure they are well mixed with onions. Furthermore cook three minutes, stirring occasionally.
Add the chopped tomatoes. Mix well and cook for a minute or two. Add the chicken broth. Bring to a boil and simmer to penetrate for 10 to 15 minutes for the flavors.

Serve with steamed rice and sprinkle some fresh coriander and chopped fresh tomatoes.
Tip: You do not have all the spices? Just use two teaspoons of Garam Masala each ground coriander and cumin. It is also a good dish to use up a few pieces of vegetables. If they are raw, chopped tomatoes, and when they are cooked already, add to pot along with the chicken.
2nd Vietnamese style salad from chicken meat
This has to be one of my favorite salads of all time lunchbox. I pack the salad in a plastic box and took the dressing in a separate container and put just before eating. This prevents soggy salad.
For 4 people

2 tablespoons sugar (I used light brown) 1 tablespoon rice wine or white wine vinegar 3 tablespoons freshly squeezed lemon juice Fish sauce 2-3 tbsp 1 tablespoon tablespoons vegetable oil (or 2 tsp sesame oil) 2 bird chilies 3 garlic cloves, finely chopped 1 shallot, thinly sliced Leftover roast chicken grated vegetables, including cabbage, carrots and cucumbers 2 tablespoons chopped mint and coriander
Combine sugar, rice vinegar, lime juice, fish sauce and vegetable oil. Mix well until the sugar dissolves. Seed (unless you like it hot) and finely chop the peppers. Add chili and garlic in the liquid. Stir in onions, chicken and vegetables with the chopped herbs. Pour over the dressing and toss gently.
Tip: Strengthens, so to speak, with cellophane rice noodles.
3 snacks crispy chicken skin
I have several recipes that, especially if I exclude poaching chicken using chicken skin, which can be very large. So when I removed the skin, it is stored in the freezer. If I have enough to make it worthwhile to cook a lot of these snacks. It is the perfect food for parties and pretty good with beer.
I have a mix of Japanese togarashi season shichimi spices, warm skin, which mixed a mixture of salt and pepper with orange peel, seaweed, sesame seeds, chili and ginger Sansho substantially. It pays to get your hands on it.
Ingredients:
Chicken skin, cut excess fat Shichimi togarashi (or salt and pepper, or your favorite popcorn mixture of salt)
Preheat oven to 190 ° C / 5 º A baking sheet with parchment paper.
Place the chicken skin in a single layer, skin side up, on baking sheet. Bake for about 40 minutes until the skin is puffed and golden.
Transfer the chicken skin can drain paper kitchen towel crispy. Sprinkle Togarashi shichimi (or spice).

Researchers at Newcastle University have developed a new way of teaching modern languages.
They provide the latest digital equipment in the kitchen utensils to create the LanCook project - a unique blend of cuisine, art and language teaching.
German, English, French, Catalan, Finnish, German, Italian and Spanish: Working in pairs, guided step by step through a recipe in one of seven different European languages students.
The diversity of culinary history in the UK, the English version has a selection of cakes or chicken curry.
The technology of integrated wireless sensors (similar to a Nintendo Wii) inserted or attached to equipment and ingredients, so the kitchen to identify and evaluate, make the progress the students work in the kitchen. "LanCook speaks a universal problem of language teaching in the classroom - students to rehearse a speech, instead of him," says project leader Professor Paul Seedhouse, University of Newcastle. "It really helps to bring the language to life in an engaging and memorable way and increased competition skills, motivation and self-confidence of students.

A good cook can spend years, the taste and flavor in one pot jambalaya right.
But if there are many parts to serve - as a large tailgate party or family reunion - the intensification of classical and complex as jambalaya recipe can be tricky.
This is where Jay Grush arrives. Grush goes by the name "StadiumRat" on a forum called tigerdroppings.com LSU sports. A few years ago a dialogue began with other food lovers on the site discussion forum foods and drinks.
"Of course, is famous for his LSU tailgating," Grush said. "People ask questions about how to cook a big pot of Jambalaya and am always willing to learn to cook one. So I started notes for me."
He asked many questions and feedback from friends in the Board of Directors of the ingredients and the specific and technical steps. He says that all cooking tips he received were a frequent topic.
"I realized that this all respects, and that is what is a spreadsheet., You can do the math to do from one cell to another, on the basis of a report".
Grush entered and called Jambalaya. In the correct proportions of the notes in an Excel spreadsheet, calculator
It is the perfect cook jambalaya pot for a large group is not as simple as double or triple the recipe to feed more people. Firstly, most people, like jambalaya pot size they are deciding.
"People say, 'Okay, I have a 5 gallons pot, you give me a prescription for them," says Grush.
He decided that the spreadsheet should be calibrated to measure the volume accurately know the people to be how much they could fit in a particular pot.
Grush also found Jambalaya is different from other dishes because the rice swells. In most recipes, everything shrinks.
"Something I did not know that I have learned from the experts on the map is that the more your jambalaya pot, less proportion of liquid rice," he said. "I think" because as you increase the size of the pot, not to increase the surface at the same speed. Must in order to reduce the liquid if your jambalaya pot come right. "
"So it's art!" Grush said with a laugh. "But it is not so multiplying a recipe. Simply Will not work if you multiply a recipe for Jambalaya, if you get in larger quantities."
I thought to share the "art of cooking" and Tuna Casserole recipe, a twist on the classic with ricotta, peas, green onions and Parmesan cheese.
Once you hear your boys (or young men): "Mama How can I get this recipe?" Is a mother's heart sing! This week is the last week of the summer for our family to be together, and the clock is ticking, I have a stew of tuna. Gotta back in the habit of using my slow cooker (from first thing in the morning), but the day, I waited until the last minute. I wanted a recipe that substance, and I do not want to go to the store, so I looked in my fridge and pantry and I remember tuna casserole recipe from my mother. heavy white sauce, pasta, and white cheddar cheese on top of the comfort food so good, tasty but so unhealthy. This is where I want when my children with food brought him (and I was not up to what was the norm for my generation). You like whole wheat pasta DeLallo, and all agree that nothing beats the taste. This is all they talk now :)
Last minute cooking.
Cooking at the end of the day, sometimes I feel downward spiral. But I would put something healthy on the table, tasty, and I do not want to waste time or money on the ingredients. I am not happy with me if I waited until the last minute for dinner for my family to prepare, but sometimes it happens {} life. I'm still dizzy, my food is.
Ingredients tuna casserole.
Whole wheat pasta (from DeLallo is better) 2 cans of tuna (solid white albacore tuna packed in water) Ricotta Parmesan + Peas + green onions
The good and bad results.
I love to explore and modify many recipes (with what I have on hand), and my family is reaping the rewards with a full stomach ... usually crowded happy belly. Although I was in my 50s I'm still the master of the kitchen, and there is always room to grow! I mention this in order to teach my children that I cook them life lessons in the art of cooking, how to deal with failure, how to proceed. This is our attempt to collect a premium of love.
Cleaning.
The fault ... oh how I hate the mess I. In our kitchen as I cook I am one of those messy cooks, with everything. Onto the counter But this summer I have been blessed with children, cook with me, and clean as we go. Yay! I loved to hear my son say, "Mom, I want to know more about the kitchen," I said. "My son, these are the ingredients of the key, but it's really food and love in every dish you make it!"
We clean plates, loading and unloading the dishwasher, photograph} {his mother is a blogger, and then dive in and test the waters.
Wait ... and wait.
Sweet and sacred things happen while we waited for the food from the oven. While we wait, say-with court children for this, they are something wonderful happened starving-. The food takes more flavor when cooking, and I tell the guys to have a job to do in this world.
Never forget that courage to be invisible, every word and every action is part of God's plan for their lives, their dreams, their hopes.
I always think about how they can change the world. It is through love., And the food, no matter what the profession of their choice, the people gathered in his house one day, now in their 20s
And waited ...
The art of cooking.
The timer is activated, we left the oven, and after it happens.
It is a mystery how the ingredients in a bowl when we try something new - whether turning off?
We can not lose sight of the art kitchen. It really is more than food for the body; It is the healing of our souls.
