Wine and Dine grill-Side: 7 drinks and recipes perfect

1 Cajun Chicken

AllRecipes.com hot or cold serve Cajun chicken salad sandwich, or dinner. If grilling on the weekends, you can use the remnants of lunch during the week or make a quick and easy dinner.

Ingredients:

  • 2 cups vegetable oil
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons Italian dressing
  • Garlic powder to taste
  • 2 tablespoons lemon pepper
  • 10 skinless, boneless chicken breast halves - beat thick to 1/2 inch

Preparation: In a large bowl, combine the oil, Cajun seasoning, Italian seasoning, garlic powder and lemon pepper. Place the chicken in the bowl and turn to coat with the mixture. Cover and refrigerate for 1/2 hour.

Preheat the grill on high heat. Oil the grill grate. Drain and discard chicken marinade. Place chicken on hot grill and cook 6-8 minutes per side or until juices run clear.

Pairing wines available: In order not to obscure the taste of this dish, stick to the lighter wines.   Try X0 Riesling 2012, which is the perfect balance between sweet and dry and is an excellent complement to this dish of spicy chicken; or go for a light, crisp Pinot Grigio 2012 Super Montefresco.
